Fascinating, thank you. I also think part of the UPF problem is not the food itself but it's absolute availability. Food is everywhere, eating is now leisure, almost a hobby. Meals used to be meat and two veg and pudding (not dessert) for Sundays. Confectionery was only available from sweet shops and paper shops not everywhere as now. There seems to be a Greggs every 250 metres.

Are you familiar with the Hava app and Dr. Eenfeldt and Dr. Ted Naiman (spelling?) and their satiety-per-calorie approach? I think it may be broadly consistent with what you’ve shared here. I am interested in any thoughts on it.

I think the other factor which cuts across this (full disclosure, I am addicted to sugar) is when there are 'harmful' foods hidden in the mix. So the taste and fulfillment (the Dopamine hit) is the same as home cooked food but its doing more damage. Biggest culprit is probably (yes) sugar, where it is accompanied by lemon juice/citric acid, or apple juice to make the "sweetness" palatable. Except the sugar is still in there at in vast quantities doing damage to our waistlines and also teeth. I have been verifying this N=1 experiment for years, sadly.
